This champagne comes from David Levasseur, a 3rd generation farmer and winemaker who unlike quite a few champagne producers uses his own fruit exclusively. At just over 4 hectares this makes him a very small producer meaning the care that goes into growing these grapes is second to none with David looking to intervene with the wine as little as possible. The Rue du Sorbier is predominantly Pinot Meunier with a small amount of Pinot noir and Chardonnay all grown organically, dry, delicate and complex.
