Only traditional methods are followed in Claude Thomas’ vineyard. His son-in-law, jean-Paul Labaille is now the head winemaker and farmer continuing to produce authentic expressions of Sauvignon blanc from Sancerre.
Their vineyards are so steep that everything they do is by hand, allowing for full control over their vines and producing some of the best grapes grown in that region. Hints of fresh cut grass and gooseberries with an acidity to match.
